Given that dried red beans could not be found in the South of France, a discovery was made: one litre cans of red beans in Super U are a great alternative.

Ingredients:

  • Red beans 1 large jar
  • Walnuts 1/2 cup
  • Turnip onions 2 heads
  • Garlic 2-3 cloves
  • Fenugreek (blue fenugreek)
  • Chili pepper flakes or ground
  • Ground black pepper
  • Cilantro large bundle
  • Red basil (a couple of sprigs)
  • Pomegranate
  • Vegetable oil

Recipe:

Drain part of the liquid from the can into a bowl.
Dice onion and fry in vegetable oil with crushed garlic until golden. Add ouzcho suneli, chilli and blackpepper.

Chop nuts into small pieces with a knife.

Heat beans in a saucepan.

Finely chop coriander and basil.
Add to the beans.
Add fried onion and spices.
Add chopped nuts.
Stir. If too thick, heat the reserved liquid from the bean can and add to the desired consistency.
Salt to taste.
Instead of UtshoSuneli you can add Humeli Suneli. But this spice has a brighter and more pronounced taste. Be careful with the quantity.

Garnish with coriander, walnut kernels and pomegranate. Serve warm or cold.
